Red, White & Blue Cake Recipe from Pick ‘n Save for Memorial Day

We are so thrilled to be back in Wisconsin and able to celebrate holidays with family again. For Easter this year, I was home but Mike was still working the last few days in Washington. Our very first “holiday” back here as a family is Memorial Day, and we couldn’t be more excited. Let me rephrase that. While Memorial Day is a federal holiday, it’s not really a happy day. Our family remembers fallen soldiers on that day and every day, but if we can spend the day having a BBQ with family and friends and get the day off of work too, then heck yes!

We are just about unpacked at this point with only about eight boxes to go, and in fact, by the time this post goes live, I’m hoping that we are totally unpacked. One of the million things we have had to do in the week and half we’ve had our own place has been finding a new Wisconsin grocery store to shop at. We LOVED the grocery store chain we had out in Washington state, and we were very pleased to see that our local Pick ‘n Save was only a couple miles from our house. As a busy mom, I am always glad to have the grocery store nearby our house. Pick ‘n Save has lots of selection and I was easily able to round up some ingredients for a festive Memorial Day dessert!

While I don’t always adhere to the cleanest of eating while making dessert, I do try to cut corners here and there. If I can use organic sugar over regular, then I will. Same goes for flour, milk, etc. Pick ‘n Save has a health key system that helps me to make a better choice when I’m at the grocery store. There are color-coded icons on the labels of the food on the shelf that point out 18 important ingredient and nutrient attributes, ranging from organic and gluten free to no lactose, no added sugars, and Vitamin C. To gain a health key tag, products must pass through filters specifically put in place to omit items with excessive fat, saturated fat, cholesterol, sugar and sodium.

As you can see in the picture above, lots of the milks have green labels on them. If you look up close you can see that the labels say things like organic, gluten free, and vegan. It definitely makes it easier on me to be able to check out the label from afar rather than have to read the back of every box!

The recipe I am planning out for Memorial Day is surprisingly simple. I gave it a test drive today. I simply bought a box of white cake mix, and separated the batter into three bowls. One stayed white, and the other two got red and blue food coloring. I took little mason jars and sprayed coconut oil inside of them so they didn’t have the cake stick too badly. I layered the shades inside and went almost halfway up the inside of the jar with batter. I then popped the pan in the oven after following the instructions on the box.

If you are a master baker, yours might turn out prettier, but I’m not too worried. I think they’re kind of cute! Once they were out I used my one baking secret that I know to add frosting to the top. I poured my homemade frosting into a ziploc baggie and snipped out the corner. Voila! My very own disposable cake decorating bag!

My husband is the major baker in the family, so rather than buying a pre-made frosting, I figured I would try to impress him by making my own. I couldn’t come up with my own recipe, so I used this one for an easy vanilla buttercream frosting!

When it was all said and done, I decided to add some fresh strawberries to the top. It was so yummy! And best yet, I was able to pick up all the supplies I needed at one stop, Pick ‘n Save. Now that I’ve given this recipe a test drive, I’m excited to make it for our Memorial Day plans next week.
