Mexican-Inspired Grilled Corn on the Cob

It’s grilling season, making it my absolute favorite time of the year. The sun is shining, most of our days are spent outdoors having a blast, and my husband has taken over making dinner almost every night. As a stay at home mom, that pretty much means I’m in heaven! Grilling season means simple dinners that I don’t have to make. If I’m lucky, dinner is ribs and corn which is my absolute favorite. I love savory sauces and delicious seasonings that break from the traditional meal.

My favorite way to make corn on the grill is inspired by some corn on the cob I bought on a street corner once. It was SO good and the seasonings seemed to be Mexican inspired. I’ve tried recreating it many times but recently I really nailed it. It’s so easy but I’ll take you through the play by play on my grilling hack.

  1. Husk the corn
  2. Cover the corn in butter and lime juice and cover in tin foil.
  3. Grill for 10 minutes. 5 on each side.
  4. If you want the corn blackened, unwrap and lay the bare cob on the grill for one minute, flip and repeat.
  5. While the corn is hot, slather it in chipotle mayo, chili lime, and cayenne pepper seasonings.
  6. Put in the skewers and enjoy!

With flavors this good, you don’t even need to go to the restaurant. We love how easy and inexpensive it is to grill out, and the kids love all the messy stuff. The hardest part is cleanup, but even that ends up being a breeze. Between Kleenex® Wet Wipes Gentle Clean and Viva® Paper towels, we have all of our BBQ messy bases covered. 

Kleenex Wet Wipes are great for messy faces. I’m not even kidding, I had BBQ sauce from these ribs in my eyebrows when I was done eating! Some of the best food makes the biggest mess and I love that these wipes are thick and soft, have no harsh chemicals, and are made for hands and faces. I’ve used both the Gentle Clean wipes and the Germ Removal wipes, and both are great options for cleaning up after messes. I do prefer the Gentle Clean for hands and face. Both varieties are available in the facial tissue aisle.

VIVA® Paper Towels are stocked in our pantry, and we bring them with us everywhere our family goes because we are always a mess. HA! Backyard patio, beach, park, poolside. You name it, we are there with cloth like paper towels to help make clean up easier. 

We picked both of these items up in the same aisle at Kroger! In fact, tonight was just another Wednesday, but grilling tasted so good that we’re probably going to do it again for Father’s Day this weekend. My husband is a veteran and gets free tickets to Brewers Games from our local Vet Center. We are planning to enjoy a game and come home and recreate this exact meal again over the weekend.     Corn on the grill like this is what summer is all about. Right now the corn can be so sweet too. I don’t think I could use my kitchen without those paper towels. I stock them up too.
