Today is the second installment of Foodie Friday! Today a few other bloggers and I are posting our favorite dip recipe. This recipe is one I love because it’s super easy, and inexpensive. Perfect for having company over, and perfect for chowing down by myself. Enjoy!
First you’ll want to thaw the spinach separately, and press out as much juice as possible. While you’re doing that, you’ll want to soften the cream cheese in the microwave, and add in the mayo and parmesan cheese.
Add the milk.
Add the thawed spinach.
Chop up the artichokes.
And finally, mix everything together. At this point I would transfer from a mixing bowl to something microwave or oven safe to heat it up. You could even transfer to a crock pot to keep it warm while company is over. Because nothing is more annoying than having to reheat the dip over and over!
The finished product is so yummy!
Ingredients:
10 oz. pkg frozen spinach8 oz. pkg. fat free cream cheese1 can artichoke hearts2 Tbs. light mayonnaise3 Tbs. skim milk3 Tbs. parmesan cheeseblack pepper to taste
Directions:
Thaw spinach. Press out as much juice as possible. Soften cream cheese in microwave. Mix everything well, except artichokes. Chop artichokes. Fold into mixture. Serve warm.
Serving size= 1/2 cupNumber of servings: 8
