Today I want to share with you a super easy way of cooking that has become commonplace in my house. We used to go grocery shopping and plan our list around meals that had no ingredients in common. It was hard to eat all the food we purchased before it went bad, and it was expensive! It was discouraging because as a new mom I wanted to cook healthy and delicious meals for my family but I couldn’t understand how to accomplish that without breaking the bank and buying out the grocery store.
Enter, eMeals. After having Jocelyn, we decided to adopt a new method of grocery shopping. through eMeals, we were able to pick a style of eating we liked (paleo, clean eating, vegetarian, and many more), and get meal plans delivered to our inbox weekly. Each meal plan comes with seven dinner, including the entree and side dishes. Along with the meal plan, you could print out or access a grocery list on your smartphone at the grocery store. They divide it by section for you to take out the guesswork, and depending on your meal plan, you can also set it up to shop to the coupons in the grocery store.
Without giving you a specific recipe from the list, I wanted to share with you a staple dinner in my family that everyone loves. Pictured above is organic macaroni and cheese with steamed broccoli, sauteed mushrooms, yellow peppers, onions, and diced tomatoes. We’re Wisconsinites, so right after this picture was taken, this was promptly smothered in ketchup and devoured. Hey, don’t judge.
What’s remarkable about a recipe like this is that it’s family friendly, healthy, and contains leftovers from other meals so that nothing goes to waste. The same week I made this veggie mac and cheese recipe, we had steamed broccoli as a side with another meal. The night before we had tacos with diced tomatoes and fajita vegetables. I bought a box of mushrooms to make homemade pizza and threw a few in with this recipe to make sure they would get used up. eMeals is all about recycling ingredients throughout the week so nothing ever goes to waste. We have saved so much money since subscribing!
eMeals literally changed the way my family thought about cooking. Growing up, we ate a lot of boxed and canned foods because it was easy. Eating like this is SO easy, so delicious, and so much cheaper than eating crap or dining out because we didn’t feel like another boxed meal. I was able to lose the rest of my baby weight last summer on the clean eating plan. It kept my grocery shopping trips organized, kept us eating new and exciting foods we wouldn’t have normally picked, and we found some new favorite recipes that we use all the time now!
