Since we made our move back to the Midwest, most of the friends I’ve made have been at the gym. I love the idea of having like minded friends who would rather have healthy hobbies together than sit around and eat cheesy carbs. I mean, I love cheesy carbs, but I would love to lose the remainder of my baby weight jiggle, so I’m trying to be a little more conscious of what I’m eating. We were going to have some friends over this weekend until stomach flu struck, and I had stocked up the fridge with healthy nibbles. When it didn’t pan out, I realized Sunday night that I better get my munch on before the tomatoes went bad.

tomato mozzarella balsamic bites recipeI can’t exactly take ownership for this recipe, because my mom makes it all the time, and then I was reminded of it when they were out as samples at Trader Joe’s last week. But it’s kind of like veggies and ranch dip- I’m sure lots of people have thought to put the ingredients together, so I’m just relaying the message that you should pair these things, because yum. 

tomato mozzarella balsamic bitesYou’re going to need only three ingredients- fresh mozzarella, grape or cherry tomatoes, and balsamic vinegar. All three of these things are available at Trader Joe’s or probably most grocery stores. And toothpicks make for a daintier way to enjoy these as well, so you might want to pick some of those up too.

cherry tomatoesI simply half the cherry tomatoes with a sharp knife, and do the same for the fresh mozzarella balls. The mozzarella that comes in the tub from Trader Joe’s is already in individual balls and they are about the same size as the cherry tomatoes. If you buy a slab of mozzarella, you will just have to chop it into smaller pieces.  I then skewer them with a toothpick. 

healthy snacksThe balsamic gets drizzled over top of the whole thing, and voila! You’re done. I think these are super tasty and a really nice healthy appetizer for very little money or effort.

When I buy items that don’t normally make it on my grocery list, I often worry about how I will use them up before they go bad. If you buy these ingredients and don’t have that many mouths to feed, don’t worry! It’s easy to use up all the ingredients. You can toss all three ingredients together on a salad. I’ve snacked on cherry tomatoes that are halved and dipped in salt. You can also make a pizza, or doctor up a cheese pizza that you already have on hand. Simply spread out the mozzarella slices and tomato pieces on the pizza and add some spinach. 

This is a really healthy and delicious snack that I love. I hope you try it! I should add that my toddler will eat mozzarella balls like they are going out of style too. And my husband who hates tomatoes will eat this. The whole family will enjoy these!
