Today I’m going to share with you one of my all time favorite summer recipes, Blackened Salmon with Bacon and Tomato Sauce. It’s my favorite for so many reasons. It’s an impressive recipe yet super easy and it’s a crowd pleaser. It’s a great way to feed my family fish and tomatoes despite my husband’s hatred for both of those foods. In fact this is one of his favorite recipes and at least half of the ingredients are ones he will normally not touch. Lastly, it’s so delicious and EASY and requires only a few ingredients. hunt's diced tomatoes.jpg

We shopped at Walmart for this recipe. SO MANY TOMATO CHOICES. Am I the only one who gets a headache at the amount of choices for the simplest of ingredients? If you are ever in the tomato aisle, consider picking up some Hunt’s because they source their tomatoes 100% out of California, and use a flashsteam peeling process with water, no lye, within hours of the tomatoes being picked. Pretty cool, ‘eh? Also if you’ve ever noticed how cheap canned tomatoes are, you should try cooking with them more often. There is so much more to make than spaghetti and pizza! Blackened Salmon with Tomato & Bacon Sauce

Ingredients
  1. 4 filets of skinned salmon
  2. Coconut oil
  3. Blackened seasoning
  4. 1 onion
  5. 3 cloves minced garlic
  6. 6 strips of bacon, diced
  7. 1- 14.5 oz can of diced or crushed tomatoes
  8. 1/2 cup chicken stock
  9. 1/2 lemon, juiced
  10. Salt and pepper, to taste
Instructions
  1. Prepare the tomato bacon sauce so it can simmer while you work on the fish. Add the diced bacon to a pan, cooking on medium high heat. Stir occasionally until crispy. Remove and set aside but keep the bacon grease.
  2. In the pan with bacon grease, add your chopped onions and garlic. Cook until translucent and slightly brown. Add tomatoes, stock, and bacon, simmering on low.
  3. Skin your salmon, pat dry with paper towels, and season each side of the dry fish with the blackened seasoning. Place the fish in a hot pan or skillet with your coconut oil. The sizzle tells you you've got it hot enough to blacken without overcooking. Cook 2-5 minutes per side.
  4. Top the blackened salmon with your tomato and bacon sauce, and dinner is served!
Notes
  1. Pre made blackened seasoning can be pricing- save money by making your own! You might already have all the spices in your cabinet. Google a recipe!
  2. Save some time by buying skinless salmon! If you're skinning your own be careful to get as close to the skin as you can so you don't waste it.
  3. Try fire roasted diced tomatoes for some kick if you like that sort of thing!

This recipe means so much to me. My family came out to visit me last summer, a little over a year ago, while we were in Washington. My mom recently started a cooking hobby (of course, 10 years after I moved out- I was personally raised on Hamburger Helper!) and she made all of her new recipes when she came out to visit us. This was my favorite one and every time I see her I beg her to make it now. If you talked to me 10 years ago I would NOT have been begging my mom to make me much of anything!

 It’s easy and delicious and it makes everyone’s belly happy. Serve it with bread or a side salad if you need a little something extra. I hope you make it and tell me all about it! This recipe is the bomb and perfect for summer!

      I know same here! My husband hates all the vegetables I love- mushrooms, tomatoes, green peppers, etc. but he still loves this recipe so everybody wins!
